My latest obsession

I’ve wanted to make kombucha for a while, but it’s been just that – a want. I haven’t pursued it aggressively because I knew that when the time was right, it would happen.

When my friend Laura posted a photo of her scoby on her Facebook page, I knew that I had to ask her to keep me in mind when she had a scoby to spare. She obliged, and my kombucha journey started last night.

I’d already started a Pinterest board so I could keep all of my information together. And I started collecting recipes in anticipation that I’d have plenty of kombucha to play with.

Yesterday, I brewed my tea, mixed in the sugar, and when it was cool, I added my gifted scoby and the liquid it came in. I put it in a darkened corner of the kitchen, covered with a cloth to keep the bugs out and the air flowing. Hopefully, in about 10 days, I’ll have some kombucha ready for a second fermentation – the one that makes it fizzy!

I’ll try to keep updated on the progress.

Asian Chicken Soup with Napa Cabbage and Bok Choy

I loved this soup so much that I was thankful to Ciel for adding it to this week’s menu! It’s quick and easy, and if you love spicy food, just add a couple of teaspoons of sambal oelek!

Serves: 4

Ingredients

  • 1 T sesame oil
  • 3 cloves garlic minced
  • 1 1/2 T ginger peeled and minced
  • 1 lb boneless, skinless chicken diced into 1 inch cubes
  • 5 cups chicken stock
  • 1 1/2 T fish sauce**
  • 2 T gluten-free soy sauce
  • 1 carrot cut into ribbons using vegetable peeler
  • 1/2 head napa cabbage chopped
  • 2 stalks of bok choy thinly sliced
  • 1 T lime juice
  • salt pepper to taste

Directions

  1. In a large saucepan, heat the oil over medium-high heat. Add the garlic and ginger, sauté until fragrant, about 30 seconds. Add the chicken and cook until golden brown on all sides, 5–7 minutes. Add the stock, fish sauce, and soy sauce, bring to a boil. Add the carrots, napa cabbage, and bok choy. Cook until bok choy is tender, 2–3 minutes. Remove from heat and stir in the lime juice. Season with salt and pepper and serve.

Veggie Mac and CheeseApparently, I’m a bad blog-runner. Life gets just a little crazy, and I go three weeks without posting. Woops. But now I’m back in a normal groove, at least for a little while.

It’s been an interesting month. A month filled with comfort food to help distract me from certain stressors that’ve been on my mind constantly. In the last 30-ish days, I decided to move out of New York and in with a boy (ew, gross). I feared not being able to keep my job due to this move (but, thank goodness, I am!). I apartment-hunted via Skype with said boy. We chose an apartment.  I took a weekend trip to help him move in. We picked out (and fought about) furniture. This looks like a recipe worth trying! I love pumpkin, and mac & cheese is one of my favorite comfort foods.

Happy Easter Sunday everyone! It doesn’t really feel like Easter for me. Without chocolate or gifts its just another weekend. We use to celebrate by having a picnic and gorging on chocolate, but this year everyone’s been busy. In a way I am happy I didn’t get any unwanted chocolate. No one ever buys me dairy free chocolate. I don’t know if I should just be grateful that people think to give me something or I should be annoyed that they know I can’t eat it and give it to me anyway. Marco usually eats any dairy gifts I get so he’s happy either way.
